2005 Cabernet Sauvignon
Parry Cellars 2005 Cabernet Sauvignon is like visiting our home in St. Helena. In one sip, you feel the warm sunshine on the grapes, smell the aroma of harvest and savor the elegance of ripe fruit.The 2005 growing season was difficult beginning with a wet winter and cool summer. Although the cool weather slowed ripening , it allowed a longer hang-time for the heavier clusters to achieve proper maturity without high sugar readings. As a result, we had one of our largest and the latest harvest ever producing 260 cases of another elegant, well-balanced cabernet with loads of fruit and soft, silky tannins.
The wine is showing a lush fruity nose with notes of blackberry, cassis, pomegranate and undertones of cumin and coriander. On the mouth, the wine has a velvety entry with notes of cherry and faint nutmeg and mocha/cocoa flavors and a lingering finish with ripe boysenberry notes. Our wine pairs wonderfully with beef short ribs, a juicy barbequed beef flat iron or roast pork tenderloin.The wine was aged for 20 months in 100% French oak barrels (45% new / 55% once-used). We are sure you will enjoy this wine now or after bottle aging for a few years.

Francis Ford Coppola Director's Cut Zinfandel
Made with fruit grown entirely in the Dry Creek Valley appellation, this unique Zinfandel includes small amounts of Petite Sirah. Half of the fruit is crushed whole, and the must is fermented in open-top fermenters for maximum color extraction and flavor enhancement. The wine is aged in French oak, which adds the essence of toasted spice and French vanilla to heady aromas of rum raisin, black currant, and red cherry.

Filmmaking and Winemaking Intersect In Sonoma
When Francis Coppola chose Sonoma County as the home for his new winery, he did so because of the area’s beauty and winemaking potential. By selecting Sonoma, Francis provided our winemaker Corey Beck, a Sonoma native, the opportunity to make wines with grapes grown in his own proverbial backyard. Director’s Cut wines are the result—appellation-designated wines from Sonoma’s diverse and distinctive appellations.
Dry Creek Valley
There are two methodologies for growing Zinfandel in Dry Creek Valley. One consists of traditional farming practices, which includes the dry-farming of head-trained, spur-pruned vines, that are quite mature and severely thinned in the spring to produce low yields. The other employs more modern methods, including bilateral cordon, spur-pruned on-wire trellising, drop irrigation, and carefully manicured canopies. We source our Zinfandel grapes from vineyards on the benchlands and hillsides, which are farmed both ways. The combination of the area’s climate, our vineyard sites, and the two types of the farming methods used produces excellent fruit with intensely concentrated flavor.
Vintage profile
The 2007 vintage was a winemaker’s dream, and, quite possibly, the vintage of a lifetime. An unusually dry winter gave way to a warm, dry spring, which significantly reduced the crop size. Conditions such as these typically produce very highly concentrated grapes. And because there were no heat waves
during the summer months, the fruit matured slowly and evenly. As a result there was full phenolic development in our red fruit and an ideal level of ripeness, thereby making it a perfect vintage for us.
Harvest commenced in mid-August and ended on Halloween. We had the luxury of slowly bringing in the fruit, picking small lots of fruit at a time only when optimally ripe, because there was still no rain in sight. Even then, we were amazed at how profusely aromatic and pronounced the flavors were.
Winemaker’s notes
To ensure that we get the maximum amount of color and flavor from our Zinfandel grapes, we use a variety of techniques, which include fermentation in open-top fermenters for approximately one week and implementing several punch downs a day. We also blend in small amounts of Petite Sirah for added structure. The wine was aged in French oak barrels for a mere twelve months. That was all that was necessary given the fully mature internal structure of the grapes and the fact we didn’t want to mask a single one of this vintage’s amazing aromatic compounds. This wine pushes the envelope of sheer decadence with an expressive fragrance of briary berries, strawberry jam, pepper and spice.
Deep, rich layers of blueberries, raspberries, dark chocolate and mint build and linger with a vanilla caramel finish. 12 months in French oak: 50% new, 50% 1-2 years old; Blend: 93% Zinfandel, 7%
Petite Sirah; 14.3% alcohol.
