A passion for precision knives led him to collaborate with Kai, the producer of Shun knives, to bring together the best traditions of French and Japanese cutlery. From Bras' collection of seven distinctive knives, the santoku knives have wide blades for greater precision in slicing and dicing, with a slight curvature for greater ease of movement. Use the small size for fruits, vegetables and herbs; the medium for small pieces of meat; the large for larger pieces of meat. As with every blade in the collection, a layer of hard stainless steel is sandwiched between two layers of more flexible stainless steel, then coated with titanium and given a matte finish. 2005 Cabernet Sauvignon
Parry Cellars 2005 Cabernet Sauvignon is like visiting our home in St. Helena. In one sip, you feel the warm sunshine on the grapes, smell the aroma of harvest and savor the elegance of ripe fruit.The 2005 growing season was difficult beginning with a wet winter and cool summer. Although the cool weather slowed ripening , it allowed a longer hang-time for the heavier clusters to achieve proper maturity without high sugar readings. As a result, we had one of our largest and the latest harvest ever producing 260 cases of another elegant, well-balanced cabernet with loads of fruit and soft, silky tannins.
The wine is showing a lush fruity nose with notes of blackberry, cassis, pomegranate and undertones of cumin and coriander. On the mouth, the wine has a velvety entry with notes of cherry and faint nutmeg and mocha/cocoa flavors and a lingering finish with ripe boysenberry notes. Our wine pairs wonderfully with beef short ribs, a juicy barbequed beef flat iron or roast pork tenderloin.The wine was aged for 20 months in 100% French oak barrels (45% new / 55% once-used). We are sure you will enjoy this wine now or after bottle aging for a few years.
2005 cabernet has received several awards including a 93 rating from Anthony Dias Blue in his August 2009 Tasting Panel magazine and the Best of Class out of 61 medal winning Cabernet Sauvignons at the Second Annual American Fine Wine Competition in Boca Raton, Florida in November 2008.
